How do I change the tile from My Family to another name?

I have changed the title and clicked Done, but when going to Print Preview the title reverts back to "My Family"

It sounds like you are changing the title from the Print dialog, and that only changes it for the current PDF that you are printing. You can change the title of your vamily tree by clicking on Account in the upper right, and then the Rename button.
