I'm doing a family tree on Queen Victoria and I want to replace "email" and "website" with other things that are actually relevant.

There is not currently a feature that lets you change field names. My understanding is that people use these fields for other purposes, but put the new field name into the field itself, so you might enter into the website field, "Reign: 63 years"
