If clicking on different family members does not streamline the tree the way you want it, try exporting the family tree as a gedcom file, and then reupload that file as a different family tree. Then just delete the family members you don't want to show. You can have multiple family trees on familyecho, so don't worry about erasing your family tree. Just don't get the two confused with each other.
