I am scared they will mess the tree up if I share it. Can anyone advise, what capabilities does the person you share a tree with have to edit the tree?

It depends whether you check the box labelled 'Allow to edit'. If you do allow someone to edit the tree, then they can edit anything on the tree. Please note there is currenly also no way to revoke this permission once it is granted.
